- Additionally, you should select rambutan that has just been picked with fresh green stems and leaves tightly attached to the fruit.
- Avoid choosing rambutan that is not round but tends to be elongated, as these fruits are often empty and lack flesh.
How to choose fresh and delicious chicken
For live chickens:
- You should choose to buy chickens that are healthy, move actively, have smooth feathers with a certain shine, and their eyes and nostrils are not leaking fluid.
- Avoid buying chickens that appear lethargic, have drooping tails, move slowly, have frizzy body feathers, and erect head feathers. These are chickens that may be infected with diseases.
For processed chickens:
- You should choose to buy chickens with characteristic shiny yellow skin. The outer skin should be thin, feel smooth to the touch, not too bumpy, and have good elasticity.

How to cook Chicken with Rambutan

Prepare the ingredients
The chicken you bought needs to be deodorized after plucking and cleaning. Use salt to rub on the chicken body and rinse it twice with clean water, then chop it into bite-sized pieces about 2 – 3 finger lengths.
Separate the rambutan from its skin and place it in a bowl. Wash the lime leaves and chilies and let them drain. Also, pick the wilted leaves from the coriander, wash it clean, and chop it small.
Peel and wash the shallots, take 1 chili, remove the stem, then put both the chili and shallots into the mortar and pound them finely with the pestle.

Marinate the chicken
Add the chopped chicken, minced shallots, and chilies into a bowl along with 1 tablespoon of fish sauce, 1 teaspoon of monosodium glutamate, and 1/2 tablespoon of salt, mix well and marinate for about 15 – 20 minutes for the chicken to absorb the spices evenly.

Cook chicken with rambutan and carrot
Place a pot on the stove, add 1 tablespoon of cooking oil, wait until the chicken is hot, then add the marinated chicken and sauté over medium heat for about 5 minutes until the chicken meat firms up, then add 1 liter of boiling water to the pot.
Next, stir the water, cook for another 5 minutes, then add the rambutan and cook on high heat for another 15 minutes until the chicken is tender and the rambutan releases its sourness, then season with 1/3 teaspoon of salt and 1/4 teaspoon of monosodium glutamate.
Stir well to dissolve the seasoning and cook for another 3 minutes, adjust the seasoning to taste, then add chopped cilantro and turn off the heat.
