How to choose fresh and delicious eggplant

  • Choose eggplants that have a white area between the stem and the skin of the fruit, as these are fresh, young, and tasty fruits.
  • Eggplants with shiny skin, uniform color, and feel heavy and firm when picked up.
  • Avoid buying those with skin changing from pink-purple to light purple, as these are fake or have wrinkled, dark skin, and dry, withered stems.

  • Prepare the ingredients

    Wash the eggplant, remove the stem, and cut into bite-sized pieces. To prevent the eggplant from browning after cutting, soak it in diluted salt water for 10 minutes, rinse with water, and let it drain.

    Wash the green onions, chop them finely, and separate the leaves from the white parts.

    Chop the chili peppers, and finely mince the shallots.

  • Grill the eggplant

    Place a pan on the stove with 2 tablespoons of cooking oil. When the oil is hot, add the sliced eggplant and grill until golden brown on both sides, about 1 minute per side, then remove and let it drain.

  • Prepare the Ingredients

    After purchasing the eggplant, peel it and cut it into 3 pieces. Then soak the eggplant in ice water, salt, and vinegar to reduce its bitterness.
