Beef liver 500 gr Onion 1 bulb Unsweetened fresh milk 220 ml Five-spice powder 1 tablespoon Margarine 3 tablespoons

How to choose fresh and delicious beef liver

  • Choose liver that is dark red or light purple, and feels soft to the touch.
  • Choose pieces of liver with good elasticity; when pressed with your hand, it should dent in, and when you remove your hand, the dent should spring back – this indicates fresh liver.
  • Do not choose liver that has a foul smell, pale color, yellow or white, and feels mushy, as that indicates it is from sick animals.

How to Prepare Beef Liver Pâté

  • Preparing Beef Liver

    Wash the beef liver thoroughly, then slice it into thin pieces.

    Next, soak the liver in unsweetened fresh milk for about 1 hour.

    After 1 hour, rinse the liver several times with clean water, then cut it into small pieces and let it drain.

    How to Clean Beef Liver Effectively

    • First, soak the beef liver in diluted salt water for at least 10 minutes. If you have time, you can soak it for 30 minutes to remove all impurities in the liver.
    • You can use alcohol or vinegar to wash the beef liver; this method helps effectively reduce the fishy smell of the liver.
    • Additionally, you can also eliminate the fishy smell, dirt, and the outer membrane of the liver by soaking it in fresh milk.
    • The beef liver must have all the coagulated blood removed before eating, so you need to boil the liver before cooking. The boiling time must be long enough to completely eliminate bacteria and remaining impurities inside.

    Put the prepared beef liver in a bowl, add 1 tablespoon of five-spice powder. Mix well and marinate for 30 minutes.

    Place a pan on the stove, add 2 tablespoons of vegetable butter, and 1 diced onion.

    Stir-fry the onion for about 2 – 3 minutes, then add the beef liver and stir well, cover, and cook until the liver is evenly cooked.

    Put the cooled stir-fried liver into a blender, then blend until the mixture is smooth.
