  • Prepare the ingredients

    After purchasing the fish, you remove the head and clean the belly of the fish, then rinse it with clean water. Next, you use a knife to fillet the fish, then remove all the skin and bones.

    You soak 3 pieces of wood ear mushrooms in warm water at about 60 – 80 degrees Celsius for 7 – 10 minutes for the mushrooms to expand. After that, you rinse the mushrooms with clean water, let them drain in a basket, shred them, and continue to cut them into small pieces about the size of a finger.

    Wear plastic gloves, apply a little cooking oil on your hands to prevent the fish from sticking. Then, roll the fish into small, round balls that are just the right size to eat, and place them on a plate.

    Place a pan on the stove, add 200ml of cooking oil to the pan. When the oil is hot, gradually add the fish balls and fry until they are golden brown.

    Cut 2 oranges in half, squeeze the juice into a bowl. Then, add 2 teaspoons of sugar, 1 teaspoon of salt, 1 teaspoon of chili powder, and 1 teaspoon of tapioca flour into the bowl and mix well.

    Place a pan on the stove, pour the orange sauce into the pan. Cook the orange sauce on low heat, using a whisk or chopsticks to gently stir continuously until the sauce thickens, then turn off the heat and transfer the sauce to a bowl.
