How to make Orange Sauce Fish Balls

Prepare the ingredients
After purchasing the fish, you remove the head and clean the belly of the fish, then rinse it with clean water. Next, you use a knife to fillet the fish, then remove all the skin and bones.
You soak 3 pieces of wood ear mushrooms in warm water at about 60 – 80 degrees Celsius for 7 – 10 minutes for the mushrooms to expand. After that, you rinse the mushrooms with clean water, let them drain in a basket, shred them, and continue to cut them into small pieces about the size of a finger.

Marinate the fish
Put the prepared fish into a bowl and season with 1/2 teaspoon of sugar, 1/2 teaspoon of seasoning powder, 1/4 teaspoon of salt, 1 teaspoon of cooking oil, 2 tablespoons of fried onion, and 2 teaspoons of fried garlic.
Then, mix well and marinate the fish for 15 minutes to let it absorb the spices.

Grind the fish
Put the marinated fish into a meat grinder, turn on the grinder at medium speed until the fish is finely ground and smooth, then transfer the fish to a bowl.
