- Choose slices of mackerel that are pinkish-white, fresh meat, without any blood spots and no fishy smell.
- Fresh mackerel will have high elasticity; when pressed, it will dent and then return to its original shape.
- Do not buy fish that is spoiled, with soft mushy meat, slimy, or crushed.
How to choose fresh Japanese water spinach
- Choose leaves that are of moderate size, still fresh and intact.
- Do not buy large, old leaves as they will have a strong flavor, making it difficult for children to eat, or leaves that are worm-eaten or bruised.
- Additionally, if you cannot find Japanese water spinach, you can still use regular water spinach, which will still provide a delicious flavor!
How to cook Mackerel Porridge

Prepare the ingredients
When you buy mackerel, to reduce the fishy smell, rub the fish with a little salt and then rinse it with water.
Pick fresh Japanese knotweed leaves, wash them clean, and chop them finely. Wash the ginger and slice it.

Boil and pound the mackerel
Place a pot on the stove with 500ml of water, add the mackerel slices along with 2 slices of ginger and boil for about 10 minutes until cooked, then remove and let cool.
After that, separate the fish meat from the skin and bones, place it in a mortar, and pound it until it is finely crushed.

Fry the fish meat
Heat a pan on the stove with 1 tablespoon of cooking oil and add the pounded mackerel meat, frying it evenly over medium heat. Season with 1 teaspoon of fish sauce and stir until the fish meat is dry and fluffy, then turn off the heat and transfer it to a container.
Note: When frying the fish, in the initial stage, the fish may stick to the pan a little, so don’t worry too much. Stir continuously over medium heat until the fish dries out and will naturally come off.

Place a pan on the stove, add the rice to the pot with about 100ml of filtered water, stir well to combine, then cook over medium heat until it becomes porridge.
Before turning off the heat, add the Japanese spinach and stir well until cooked, then transfer to a bowl and top with the fried mackerel. That’s it, you’re done.
