- Choose mackerel slices that are pinkish-white, fresh meat, without blood spots and no foul smell.
- Fresh mackerel will have high elasticity; when pressed, it will indent and then return to its original shape.
- Do not buy mackerel that is spoiled, mushy, slimy, or bruised.
How to choose fresh Japanese purslane
- Choose leaves that are moderately large, still green and intact.
- Do not buy large, old leaves because the flavor will be strong, making it hard for children to eat, or leaves that are worm-eaten or damaged.
- Additionally, if you cannot find Japanese purslane, you can still use regular purslane, which will still provide a delicious flavor!
How to make Mackerel Porridge

Prepare the ingredients
When buying mackerel, to reduce the fishy smell, rub the fish with a little salt and then rinse it clean with water.
Japanese knotweed should be picked for fresh leaves, washed clean, and then chopped finely. Ginger should be washed clean and sliced.

Boil and mash the mackerel
Put a pot on the stove with 500ml of water, add the mackerel slices along with 2 slices of ginger, and boil for about 10 minutes until cooked, then remove and let cool.
After that, separate each piece of fish meat from the skin and bones, place it in a mortar and mash it up.

Fry the fish meat
Heat a pan with 1 tablespoon of cooking oil, then add the mashed mackerel and fry evenly over medium heat. Season with 1 teaspoon of fish sauce and stir until the fish is dry and fluffy, then turn off the heat and transfer to a container.
Note: When frying the fish, in the initial stage, the fish may stick to the pan a little, so don’t worry too much. Stir continuously over medium heat until the fish dries and will come off on its own.

Place a pan on the stove, add the rice into the pot along with about 100ml of filtered water, stir well to combine, then cook over medium heat until it turns into porridge.
