How to choose fresh delicious fish
- Choose fish that are diamond-shaped, flattened on both sides, with no scratches on the body, and clear eyes.
- Check the gills; fresh fish have pinkish-red gills. Gently press the fish flesh; if it feels elastic, it’s a good choice.
- Avoid buying fish that have a fishy smell or are slightly bloated, with pale bodies, dark red gills, and cloudy eyes, as this may indicate the fish has been dead for a while and will not taste good.
How to prepare Grilled Snout Fish Hot Pot

Prepare and marinate the snout fish
Clean 600g of snout fish, remove all internal organs, and rub salt on the fish, then rinse it with water. Continue to use a knife to make diagonal cuts on both sides of the fish so that the marinade can penetrate and make it look more appealing.
Marinate the snout fish with 1 spoon of Thai hot pot seasoning, allowing it to absorb the flavor for 15 minutes. Use your hands to rub the seasoning evenly over the entire body and belly of the fish to enhance its aroma and flavor.
How to prepare snout fish without a fishy smell- Method 1: To prevent the fish from smelling, remove all internal organs and use a knife to scrape off the fish’s slimy layer.
- Method 2: After cleaning and cutting the fish into pieces, soak it in rice water for about 15 – 20 minutes, then take it out and rinse it with clean water.

Peel the garlic and mince it finely. Place a pan on the stove, heat it with 3 tablespoons of cooking oil, sauté the minced garlic until golden and fragrant, then remove it to a plate.
Wash the accompanying vegetables: banana flower, water spinach, bean sprouts, cilantro, and Vietnamese coriander. For cilantro and Vietnamese coriander, chop them finely, while cut the water spinach into bite-sized pieces. Shred the banana flower and soak it in a saltwater mixture for 10 minutes.

Fry the fish briefly
Place the pan on the stove, use the oil with garlic from above to heat, then add the fish to fry for more flavor, frying the fish on low heat for 3 – 5 minutes, then remove it to a separate plate.

Cooking the hot pot
Pour 1.5 liters of water into the pot and place it on the stove to boil, then add the remaining Thai hot pot seasoning and stir well.
Wait for the water to boil for a few minutes, then add the pre-fried fish, followed by the tomatoes, and cook on low heat for about 15 minutes until the tomatoes and fish are tender. Season with 1 tablespoon of fish sauce, taste for seasoning, and then turn off the heat.
If you like it spicier, you can add 2 chili peppers!
