How to choose fresh and delicious chicken
- Good chicken should have fresh-looking meat, no foul smell, and no bruises or blood clots on the skin.

Soak glutinous rice and cook Xoi
After buying glutinous rice, soak it in warm water for about 2 hours, then drain and place it in the steaming tray.
Next, add 1/2 teaspoon of salt and mix well, creating a hole in the middle for steam to escape. Steam the Xoi for about 30 – 35 minutes. After 15 minutes, open the lid and fluff the Xoi, then steam for another 20 minutes until cooked.

Prepare the chicken
To eliminate the unpleasant smell of the chicken, use a knife to remove the skin, rinse with water, and then rub salt and crushed ginger evenly on the meat and rinse again with clean water.
How to clean chicken without the smell- In addition to the above method, you can soak the chicken in wine or vinegar for a more effective smell removal.
- Another method instead of rubbing the chicken with crushed ginger, you can substitute with lemon and also rub similarly for about 10 minutes and then rinse with clean water.

Marinate the meat
First, mix the seasoning ingredients together to marinate the meat, including: 1 tablespoon of barbecue sauce, 2 tablespoons of shallot juice, 1 tablespoon of garlic juice, 2 tablespoons of Mai Que Lo wine, 1 tablespoon of oyster sauce, 1 teaspoon of salt, 1 teaspoon of monosodium glutamate, 2 tablespoons of soy sauce, 3 tablespoons of annatto oil, 1/2 teaspoon of pepper, 1 teaspoon of five-spice powder, 3 tablespoons of honey, and 2 tablespoons of sugar.
After preparing the chicken, add the marinating sauce you just mixed, stir well to ensure the chicken is evenly coated with the seasoning. Use plastic wrap to cover tightly and marinate for 2 hours.

Stir-fry and roast the chicken
Add 2 tablespoons of cooking oil to the pan, when the oil is hot, add the marinated chicken, pouring in all the marinade to cook over high heat. When the sauce thickens, the chicken will begin to absorb the seasoning, continuously turn the chicken to ensure it cooks evenly and absorbs the flavors.
When the sauce becomes thick, add 1 cup of water and bring to a boil, until the sauce thickens again, scoop out some of the sauce for dipping, and use the remaining sauce to brush over the chicken while roasting.
To stabilize the oven temperature, preheat the oven for 10 minutes at 200 degrees Celsius. Place the chicken in the oven and roast at 250 degrees Celsius for 5 minutes. When you notice the chicken starting to dry out, take it out and brush more sauce on, continue roasting the chicken for another 2 minutes until it is cooked through.
