Cooking coconut milk
150ml of coconut milk is put into a pot along with 120gr of sugar, place the pot on the stove and turn on the medium heat, stirring well until the mixture thickens then turn off the heat and let it cool.
Divide the mixture you just cooked into 2 equal bowls.

Roasting flour
Put all 200gr of tapioca flour into a pan, with 6 pieces of pandan leaves cut into pieces about 1 hand length, turn on low heat and roast the flour evenly.
After about 20 minutes, when the pandan leaves start to dry out and make a rustling sound, the flour is cooked, turn off the heat and remove the pandan leaves from the flour.
Tip:- Roasting the flour with pandan leaves gives the flour a natural and characteristic fragrance of pandan leaves.
- You can also test the flour by taking a bit of it to cool, placing it on your tongue to see if it dissolves quickly and doesn’t become sticky like raw flour.

Making the color mixture
Add 40ml of pandan leaf extract (made from about 4 pandan leaves and 50ml of water) into 1 bowl of coconut milk that was cooked in step 1. Stir well to blend the mixture.
Leave the remaining coconut milk as it is.

Mix the flour
You pour the roasted tapioca starch into 2 bowls and gradually add coconut milk into one bowl. Knead evenly so that the flour is moistened but still retains a grainy texture (do not let the flour form a smooth, sticky mass).
The remaining flour should be treated similarly with the bowl of pandan leaf juice mixed with coconut milk. The kneading method is the same as above.
Tip:Test the flour’s consistency by taking a small pinch in the palm of your hand, squeezing it tightly. Open your hand until you see the flour stick together but not break apart.

Shape the cake
You press the flour firmly into the mold, then remove any excess flour on the mold to achieve a smooth, flat cake surface.
Invert the mold and gently tap it to release the cake from the mold.
Repeat until all the mixed flour is used up.
