Yellow potatoes 5 cups (sliced thin) White cheddar cheese 2 cups Unsalted butter 85 grams Low-fat milk 2 cups Cornstarch 4 tablespoons Kosher salt 1 teaspoon (less refined salt) Garlic 1/6 bulb (minced) Fresh pepper 1/2 teaspoon

  • Choose potatoes that feel heavy, firm, and intact when picked up. Smooth skin indicates fresh potatoes that will taste good.
  • Opt for yellow potatoes for a sweeter and more aromatic flavor compared to slightly white potatoes. Select uniform-sized potatoes for easier preparation.

    • For potatoes that have already browned, you can briefly boil them with a bit of fresh milk. This method can eliminate the formed black spots and give the potatoes a fragrant smell of milk.

  • Cook the butter mixture

    First, place a pot on the stove and add all the prepared butter to melt it over low heat. Add the minced garlic and cook together for about 1 minute. Then, add the cornstarch to the pot, followed by salt and pepper, and whisk until the mixture is smooth.

  • Add fresh milk

    Gradually add the milk to the pot while cooking and bring to a boil. Continuously stir the sauce until it thickens, which takes about 2 – 3 minutes.

    Remove the sauce pot from the stove and add 1/2 cup of prepared cheese, stirring well until the cheese melts.

    Transfer the mixed potatoes to a microwave baking tray and sprinkle the remaining cheese on top. Cover the tray with aluminum foil and place it in the oven at 180 degrees Celsius.
