How to choose fresh ingredients
How to choose fragrant lemongrass
- To buy fragrant lemongrass, choose fresh stalks with green leaves, not dried or wilted.
- Fresh, delicious lemongrass will have a strong, characteristic aroma, and the stalks should show no signs of bruising.
- Choose stalks that have an attractive green color, with tightly wrapped leaves, and the young leaves surrounded by older ones on the outside.
- You should not buy stalks with yellowing leaves, soft and wilted stalks, as these have been harvested for a long time and will not be fragrant when cooked.
How to choose fresh limes
- To buy fresh limes, choose limes with bright green skin, firm and shiny.
- Bringing the lime to your nose will allow you to sense its strong characteristic fragrance. Touching the lime will feel smooth, not rough.
- Holding the lime, it should feel heavy and juicy; pressing lightly on the skin will release essential oils. You should choose limes that are medium-sized, not too large or too small.
- Too small limes are under-ripe, with less juice and can be bitter. Limes that are too large may have been treated with excessive growth hormones.
- You should also avoid limes with a foul smell or those with yellowing skin or tiny black spots, as these indicate poor quality.
How to choose spicy ginger
- To select fresh ginger, choose pieces that are dark in color, with many lines on the skin, bumpy texture, and divided into several segments.
- Fresh ginger, when unpeeled, still has a strong aroma, with a distinct spicy scent.
- Choose pieces of ginger that are intact, not bruised or broken. Avoid choosing ginger that has brownish skin or dry skin, as this indicates it has been harvested for a long time.
