- Opt for fresh eggs to use in cooking. These eggs, when held up to sunlight, usually have a high shine.
- Shake the egg gently. If it feels solid, you should buy it. Do not buy eggs that make noise when shaken or feel hollow, as they may be old and spoiled.
How to cook Stir-fried Mustard Greens with Eggs

Prepare the ingredients
Wash the mustard greens, drain, and cut into bite-sized pieces.
Peel and finely chop the garlic. Cut the crab sticks into diagonal slices.

Blanch the mustard greens
Put a pot of water on the stove. Wait for the water to boil, then add all the cut mustard greens, blanching over high heat for about 1 minute until the greens are slightly soft, then remove and drain.

Stir-frying the dish
Place a pan on the stove, add 2 tablespoons of cooking oil to the pan. Wait for the oil to heat up, then add garlic and sauté until golden and fragrant.
When the garlic is fragrant, add all the crab sticks and stir-fry over medium heat for about 2 minutes until the crab sticks are firm, then add the drained vegetables, add 1 tablespoon of soy sauce, mix well, and stir-fry the mixture for about 3 minutes until the vegetables are cooked.
Mix together 120ml of water, 1/2 teaspoon of salt, and 2 teaspoons of cornstarch until dissolved, then add to the pan.
Continue to separate 1 chicken egg and beat it, then drizzle evenly over the stir-fried vegetable mixture. Mix well for the seasonings to absorb into the vegetables, adjust the taste to your liking, turn off the heat, and plate it.
