How to prepare fresh beef skin

If you have fresh beef skin that hasn’t been boiled, follow these steps to properly prepare it, helping to completely eliminate the odor and maintain the crispiness of the dish:

  • Wash with diluted salt water: Soak the beef skin in diluted salt water for about 5 – 10 minutes to remove dirt and odor.
  • Blanch with ginger and vinegar: Boil water, add a few slices of ginger and 1 – 2 tablespoons of vinegar to the pot, then drop the beef skin in and blanch for about 3 – 5 minutes.
  • Rinse with cold water: After blanching, remove the beef skin and rinse immediately under cold running water to clean it, making the beef skin crisper and free of unpleasant odors.
  • Scrape off hair: Use a knife to scrape off any remaining hair on the surface of the beef skin to ensure hygiene and aesthetics of the dish.
