How to choose good eggs:

Prepare the ingredients
Wash the green onions and chop them finely. Peel the shallots and slice them thinly.
Cut the white tofu into small cubes. Slice cherry tomatoes for decoration.

Sauté crab meat
Place a pan on the stove with a little cooking oil, sauté minced red onion until fragrant, then add 100g of crab meat, a little pepper, and stir well. After that, turn off the heat, transfer the crab meat to a plate, and mash it finely.
Note: You can reserve a little unmashed crab meat for decoration.

Mix egg mixture
In a bowl, add 6 chicken eggs, 1/2 teaspoon of seasoning, 1/3 teaspoon of sugar, and 1/4 teaspoon of pepper, then whisk well until the egg mixture is combined.

How to store eggs:
