How to choose fresh ingredients
How to choose fresh shrimp
- You should choose shrimp that have a transparent outer shell with a slight smell of seawater, the head and body of the shrimp are tightly connected, and the shell joints on the shrimp body are flexible, not separated.
- Additionally, when buying, you can use your hand to press and gently move on the shrimp shell to check for freshness. If you feel a grainy texture inside or the shrimp is slimy when moving, it’s best not to buy it!
- Do not choose shrimp that have tails spread out and a straight, round body, as these shrimp may have been injected with chemicals or water to make them look plump.
- Currently, you can easily buy shrimp at markets, supermarkets, or reputable seafood stores.
Where to buy kimchi and dried seaweed?

How to prepare Kimchi Fried Rice with Shrimp and Seaweed
-
Prepare the ingredients
The kimchi you bought should be cut into bite-sized pieces. Peel the onion and dice it. Wash the green onions, drain, remove the roots, and chop them finely.
To eliminate the fishy smell of the shrimp, wash them thoroughly and soak them in dilute saltwater for about 2 minutes, then rinse again with clean water.
Next, peel the shrimp and use the tip of a knife to cut along the shrimp’s back, remove the shrimp vein, and dice the shrimp into small cubes.
For the seaweed, soak it in a bowl of water for about 10 minutes until it expands evenly, then take it out, drain, and cut it into small pieces.
-
Stir-fry the kimchi mixture
Place a pan on the stove and add 1 tablespoon of cooking oil, then add the chopped onion.
Stir well until the onion becomes fragrant, then add all the ingredients including kimchi, shrimp, 2 tablespoons of fish sauce, 3 tablespoons of soy sauce, 1 tablespoon of sugar, and 1/2 teaspoon of monosodium glutamate into the pan.
Mix all the ingredients over medium heat for about 4 minutes until the shrimp is cooked and absorbs the seasoning, then add the seaweed and stir well.
-
Make kimchi fried rice
Next, add the rice along with 1 tablespoon of sesame oil into the pan, and stir well for about 5 minutes to allow the seasonings to penetrate evenly. Then, taste and adjust the seasoning to your liking, turn off the heat, and add the chopped green onions, stirring well to finish.
Finally, you just need to serve the kimchi fried rice with shrimp and seaweed on a plate and enjoy!
Tip:- If you want the rice grains to be dry and fluffy, you should keep the rice in the refrigerator for about 3 hours or overnight.
- Additionally, to have drier, separate, and tastier rice, avoid using hot rice for frying!
-

Kimchi fried rice with shrimp and seaweed after completion will have an attractive aroma of sesame oil. When eaten, one can feel the delicious, firm taste of shrimp combined with the spicy flavor of kimchi and the savory taste of seaweed.
