How to choose fresh and delicious beef tendon
- With the naked eye, fresh and delicious beef tendon usually has a pinkish-white color. When touched, the tendon should still be firm and chewy, with a certain elasticity, and should not have any strange smell.
- Absolutely do not buy or use tendons that are dry, have unusual colors like yellow, pale white, or bluish, have an unusual foul smell, or leak yellow fluid as these tendons may be old and in the process of decomposition.

Prepare and stew beef tendon
For the beef tendon, you can buy pre-cooked tendon or raw tendon and prepare it yourself.
For raw beef tendon:
After purchasing, wash it thoroughly with diluted salt water. Place the beef tendon in a pot of water, ensuring there is enough water to cover the tendon.
To eliminate the smell, add 1 teaspoon of salt, 1 tablespoon of vinegar, and sliced ginger to the pot. Boil the beef tendon for about 45 minutes; if using a pressure cooker, boil for 15 minutes.
After that, remove it and place it in a bowl of ice water for about 10 minutes to make the beef tendon crispy and delicious.
For pre-cooked beef tendon:
If the beef tendon is soft and not too tough, after purchasing, you can briefly dip it in boiling water with a bit of salt for about 5 minutes.
If the pre-cooked tendon is still tough, you can boil it for an additional 20 minutes using the same boiling method as above.
After boiling, you should also place it in a bowl of cold water for about 10 minutes to make it crispy and tasty.
Tips to quickly soften beef tendon:
- You can add wine or vinegar to boiling water for 15 minutes, and then add the beef tendon. The tendon will soften faster, and you will shorten the cooking time.
- Cook beef tendon with pineapple. Pineapple not only enhances the flavor of the dish but also helps the beef tendon soften quicker, saving cooking time.
