- After washing the wood ear mushrooms, soak them in cold water for a maximum of 3 hours until they are softened, then remove and rinse with clean water.

- Dried shiitake mushrooms: Soak in water for 1 – 2 hours, then rinse with clean water, let them drain, and use for cooking.
- Fresh shiitake mushrooms: Trim off the stems, then blanch them in boiling water for about 3 minutes and let them drain.
