- Choose pieces of tofu that are off-white and have the characteristic aroma of soybeans.
- It is advisable to select tofu that has good elasticity and smoothness, not dry and hard, and easy to crumble, as these are the delicious tofu pieces.

How to prepare braised catfish with tofu

Prepare the catfish
After purchasing the catfish, remove all the entrails, cut off the fins, scale the fish, and wash it thoroughly with water.
Then, use a knife to cut the fish into pieces about 2 finger lengths, then carefully remove the fish bones, keeping only the fish flesh.
For the fish meat after removing it from the bones, cut it into bite-sized pieces and place them in a bowl.

- Method 1: After cleaning the fish, cut it into bite-sized pieces and soak it in rice water for about 15 – 20 minutes. Then, remove and rinse with water.

Prepare other ingredients

Braised fish with tofu
In a small bowl, add 2 pieces of fermented tofu and 2 tablespoons of soy sauce, then use a fork to mash the tofu.
Place a pot on the stove, add 2 tablespoons of cooking oil into the pot. Wait for the oil to heat, then add onion, ginger, and garlic to sauté until fragrant.
Then, gradually add the fried fish, tofu, the prepared sauce, and 1 can of beer into the pot and braise on low heat for 10 minutes.
Finally, add chili and some chopped cilantro, then cook for another 2 minutes before turning off the heat.
