Clean and marinate the fish
When you buy white fish, clean the scales, cut off the tail and head, remove all the intestines, and wash thoroughly to drain.
How to clean fish without a fishy smell:
- Soak the fish in a mixture of salt and vinegar, then wash thoroughly to drain.
- Soaking the fish in diluted lemon juice for a few minutes and then washing thoroughly to drain is also a good option.
- Alternatively, you can soak the fish in rice water for about 15 minutes before washing thoroughly to drain.
Peel the shallots, wash them clean and let them dry, then mince finely. Wash the lemongrass, let it dry, cut into slices, and then mince finely.
Peel the garlic and mince finely. Wash the chili, let it dry, and then chop finely.
Put the fish in a bowl along with 1 teaspoon of curry powder, 1 teaspoon of shallots, 1 teaspoon of lemongrass, 1 teaspoon of minced garlic, 1/3 teaspoon of seasoning powder, and 1/3 teaspoon of sugar, then mix well.

Add 2 tablespoons of sugar, 2 tablespoons of fish sauce, 2 tablespoons of water, and 2 tablespoons of lime juice into a bowl, and stir well. Add the remaining chopped chili, lemongrass, and garlic, and mix well.

Mix the flour
Add the batter into a bowl with 1/2 cup of water, mix well until the batter is smooth. Then add the fish and mix well.
Tip:
- You should add water in several times and stir to avoid clumping of the flour.
- You can add 1/4 teaspoon of turmeric powder to the batter for a nicer color.

Fry the Fish
Add oil to the pan, when the oil is hot, use a spoon to scoop the fish into portions and put them into the frying pan. When frying, turn both sides evenly so that the fried fish gets a golden color.
Tip:
- You can add a little salt or chili to the oil to reduce the splattering, use chopsticks to check if the oil is hot enough by putting them in the oil.
- You should lower the heat and then drop the fish in so that the fish is cooked through and gets crispier.
- After frying, you should remove the fish and place it on paper towels to absorb the oil, so it doesn’t feel greasy when eating.
