How to Make Fruit Tapioca Pearls

  • Blend Fruits

    First, peel the fruits, then place each part of the fruit into a blender and blend until smooth.

    Next, filter the pear and watermelon juice through a sieve for a smoother consistency.

    Finally, weigh each portion of fruit juice to get the correct amount of 80gr.

    Tip: You can add a little water to blend the fruits more easily and smoothly!

  • Mixing tapioca flour

    First, divide 400g of tapioca flour for each portion of fruit juice, each portion being 100g. Then, proceed to the mixing stage.

    Place a pot on the stove, add the dragon fruit juice, and bring it to a boil over low heat. When the mixture boils, add 20g of tapioca flour, stirring well for about 10 seconds to combine, and then turn off the heat.

    Next, pour the cooked dragon fruit flour into a bowl containing the remaining 80g of tapioca flour. Use your hands to knead until the dough forms a smooth, non-sticky ball.

    Repeat the above steps with the remaining tapioca flour portions.

    Tip: If you want the pearls to be both chewy and soft, you can use 1/3 rice flour and 2/3 tapioca flour.

  • Forming the tapioca pearls

    Divide the tapioca flour into many equal small parts and then roll them into balls.

    After that, coat the tapioca balls with a layer of dry tapioca starch to prevent sticking.

  • Boiling the tapioca pearls

    Bring a pot of water to a boil, when the water is boiling, add the tapioca pearls and boil for about 15 minutes until the pearls turn transparent and float to the surface of the water.

    Next, remove the tapioca pearls to a large bowl and mix evenly with about 4 – 5 tablespoons of brown sugar to finish.

    Tip: You can adjust the amount of sugar according to your sweet preference!

How to store pearls without hardening

  • After boiling, take the pearls out, soak them in cold water or rinse under running water so that the pearls do not stick together. Next, mix the pearls with brown sugar and then keep them warm in a rice cooker (warming mode). This method will help the pearls stay soft and not harden for up to 1 day.
  • To preserve the pearls longer, place them in a tightly sealed container and put them in the fridge. With this method, the pearls can be stored for 3 – 4 days without fear of spoilage.
  • When you want to use them, you just need to briefly boil the pearls again. However, if you want the pearls to taste good, you should make and eat them right away.
