Tips for choosing good fruits for making cake
- Tip for choosing Kiwi: Choose kiwi fruits with soft stems for sweet ones, and hard stems for sour ones. Select large, round, plump kiwi with plenty of fuzz and a slight curve. Avoid misshapen or flat ones.
- Tip for choosing ripe mango: Choose mangoes with smooth, shiny skin, even color, and a slightly indented area at the stem end. A good ripe mango will have a firm stem, not soft. It should have a strong fragrance, feel heavy in hand, and not be mushy or squishy when pressed.
- Tip for choosing strawberries: When selecting strawberries, choose those with a distinctive aroma, bright red color, and plumpness. Choose ones that still have their stems and leaves intact, as this is a sure sign they are fresh.
How to make Fruit Crepe Cake

Mix the crepe batter
Crack 2 eggs into a bowl, add 30g of sugar, and whisk well. Next, gradually add 20ml of honey, 1 teaspoon of vanilla extract, 20g of melted unsalted butter, and 300ml of sweetened fresh milk, mixing all the ingredients well as you add them.
Then, sift the flour into the bowl, mixing until the batter is very smooth.
Cover the bowl tightly with plastic wrap and let the batter rest for 20 minutes. While waiting for the batter to rest, prepare the whipped cream and process the fruits.
Note: Sifting the flour helps to make the flour smooth and removes any lumps.

Make the whipped cream
Pour the whipping cream into a tall glass, and use a hand mixer to whip it until fluffy.
After whipping, scoop the whipped cream into a piping bag and place it in the refrigerator.

Prepare the fruits
Wash the fruits, soak them in diluted salt water for about 10 minutes, then rinse them again with clean water.
Remove the green leaves from the strawberries and slice them lengthwise.
Peel the kiwi and cut it into slices about 5mm thick.
Peel the mango and cut it into bite-sized pieces.
Note: You can also substitute with other fruits such as grapes, raspberries, longans, etc., as you like.

Fry the cake
Place a pan on the stove and heat it over medium heat. Add 1 teaspoon of cooking oil to the pan, using a paper towel or brush to evenly spread the oil across the bottom of the pan.
Pour a moderate amount of batter into the pan, tilting and swirling the pan so the batter coats the bottom evenly. Cover the pan for about 30 seconds, then open the lid, flip the cake over, and wait another 30 seconds.
Remove the cake and place it on a baking tray to allow it to release steam and dry out. Repeat this process until all the batter is used up.

Prepare a piece of cardboard cut into a circle, covered with aluminum foil.
First, place a piece of cake on the foil-covered cardboard. Then take the whipping cream out of the refrigerator, squeeze it onto the cake, and spread it evenly so that the cream covers the entire surface of the cake. Next, sprinkle various fruits on top of the cream.
Continue layering with a layer of cake, a layer of cream, and a layer of fruit until all the cake is used up.
Put the cake in the refrigerator for about 30 minutes, then take it out and cut the cake into triangular shapes, placing them on a plate.
