How to choose fresh and delicious chicken eggs
- You should choose eggs that have a thin white powdery layer on the outside, feeling rough or heavy to touch because these are fresh eggs. If the egg shell is smooth, shiny, or has cracks, it is old and not tasty.

Whisk the egg yolks
First, separate the egg yolks and egg whites into 2 different bowls. In the bowl with the egg yolks, add 20gr of sugar and whisk until the eggs turn a light yellow color.
Next, add 25ml of cooking oil, 35ml of unsweetened fresh milk, 40gr of whole wheat flour, 5gr of green tea powder and continue to mix well until the mixture is combined.

Making the cream
In a bowl with egg whites, add 1/8 teaspoon of salt and use a mixer on low speed until the eggs form tiny bubbles like soap.
Divide 20g of sugar into 2 parts, adding each part to the egg mixture and continue mixing at medium speed until the sugar dissolves, and the eggs are soft and fluffy, forming peaks that bend downwards.

Mixing the batter
Divide the whipped egg whites into 3 parts, adding each part to the yolk mixture.
Gently mix the mixture from bottom to top. Bring the spatula down to the bottom of the bowl, lift the ingredients up, and fold it to the side. Repeat this until the mixture is well combined (Folding technique).
Tip: If you are not familiar with the mixing technique described above, you can gently stir the mixture in a clockwise direction! Note that you should stir gently, as stirring too vigorously will break the air bubbles in the eggs, causing the cake to deflate and become dense after baking. -
Bake the cake
Preheat the air fryer to 130 degrees Celsius for 5 minutes. Next, pour the batter into the mold and bake at 130 degrees Celsius for 45 minutes.
