Prepare the beef
When purchasing beef, wash it thoroughly with water and let it drain, then use a knife to slice the beef thinly.

Marinate the beef
Marinate the beef with 1 tablespoon of salt, 1 tablespoon of pepper, 2 tablespoons of red pepper, 10g of thyme leaves, and 2 tablespoons of olive oil for about 20 minutes to allow the meat to absorb the spices evenly.

Prepare vegetables and mushrooms
Use a grater to slice 100g of green zucchini, 100g of yellow zucchini, and 100g of carrot, then use a knife to cut them into long strips.
For scallions and rainbow chard, also use a knife to cut them into long strips.
Cut broccoli, 100g of green zucchini, 100g of yellow zucchini, and potatoes into bite-sized pieces with a knife.
Use a peeler to peel baby carrots, and cut off the stems of white and brown reishi mushrooms.
Slice oyster mushrooms and onions thinly with a knife.
Soak the prepared ingredients in ice water and get ready for the next step.

Boil and stir-fry vegetables
Place a pot on the stove and boil water, then briefly boil the western melon, broccoli, green zucchini, yellow zucchini, baby carrots, and rainbow chard leaves.
Remove the ingredients and immediately place them in cold ice water to maintain their crunchiness.
Place a pan on the stove, add 20g of butter along with 1/2 of the prepared onion, 25g of garlic, and 2 sprigs of rosemary. Next, add 50g each of 3 types of mushrooms and stir-fry until cooked. During the stir-frying process, add 1/2 teaspoon of salt and 1/2 teaspoon of pepper.
Place another pan on the stove and add 1 tablespoon of olive oil, 1/2 of the prepared onion, 25g of garlic, the stems of the rainbow chard, green zucchini, yellow zucchini, carrots, and sliced scallions. Stir well and sauté until the ingredients are cooked. During the stir-frying process, add 1/2 teaspoon of salt and 1/2 teaspoon of pepper.

Pan-fry the bacon
Place a pan on the stove, add each piece of bacon and pan-fry until the meat firms up, then remove.

Wrap the beef filling
After the meat has absorbed the seasoning, spread the beef out, then gradually place the stir-fried vegetables, mushrooms, and bacon in the center and roll the meat tightly. Next, use string to tie the meat into a round cylindrical shape.
For the meat spread sauce, put 50g of mustard, 50g of olive oil, thyme leaves, 1 sprig of rosemary, 1 tablespoon of salt, and 1/2 tablespoon of red pepper into a bowl and mix well.

Place the beef tray along with 5 – 6 sprigs of thyme in the oven and grill at a temperature of 200 degrees Celsius for about 25 minutes. After that time, open the oven door and remove the thyme, then continue grilling at a temperature of 165 degrees Celsius for about 25 minutes.

Final Product
To prepare the accompanying sauce, place a pan on the stove and add 20g of butter, 50g of shallots (left whole), baro, finely chopped celery, thyme, rosemary, and 1/2 tablespoon of red pepper, and stir well. Then add 200ml of red wine, 200ml of beef broth, and 50g of beef seasoning powder. Bring the mixture to a boil, then turn off the heat and strain it.
Place a pan on the stove and add 20g of butter, 20g of onion, then add 50g of lard mushrooms, 50g of white reishi mushrooms, 50g of brown reishi mushrooms, and sauté until cooked. After that, add the strained sauce and heat until boiling, then turn off the heat.
