- You should choose live carp, large, thick, and plump.
- Choose carp with evenly distributed, bright scales, without bruises or looking too worn out.
- It is advisable to select river carp that have developed in a natural environment.
- Avoid choosing carp with a swollen belly, as these fish often lack sweetness in the flesh.
How to choose fresh and delicious sấu
- You should choose ripe sấu, with slightly rough skin, bright green color, and thick flesh, without bruises or dents, or overripe sấu as they have very little meat.
- You should not choose unripe sấu with shiny skin, or those that are crushed or show signs of spoilage.
- To buy delicious sấu, you should choose them when they are in season, usually from June to September.

- Choose tomatoes with bright red skin, evenly colored. No scratches, intact skin, and firm flesh.

Prepare and Marinate the Fish
When buying carp, ask the seller to scale, gut, and cut it into slices to save time.
To eliminate the fishy smell, wash it thoroughly with water and rub 1 tablespoon of salt all over the fish for about 2 minutes, then rinse 2 – 3 times with clean water.
After cleaning and draining the fish, place it in a bowl, add 1/2 teaspoon of turmeric powder, 1/2 teaspoon of salt, and 1 teaspoon of pepper.
Add 1 teaspoon of seasoning powder, 1 teaspoon of fish sauce, and 1 teaspoon of white wine, mix well so that the spices absorb into the fish and marinate for 20 minutes.
How to Clean Carp Effectively, Without Fishy Smell
- Use salt or ginger and white wine to rub all over the fish for about 2 minutes, then rinse with water; the fishy smell will disappear.
- Soak the fish in a diluted saltwater mixture for 10 – 15 minutes, then rinse with water to completely eliminate the fishy smell.
- You can also soak the fish in rice water for about 15 minutes, as rice water is effective in removing the fishy odor from the fish.

Prepare other ingredients
Strip the skin of the jute, cut it into diagonal slices and put it into a bowl of water to wash clean, then drain. Clean the sour fruits, crush them.
Peel the purple onions, cut them into thin slices. Wash the tomatoes and then cut them into wedges. Clean the green onions, then cut them into pieces about the length of one finger segment.
Ask the seller to peel and cut the eyes of the pineapple to save time; when you buy it, just wash it clean and cut it into bite-sized slices.

Sauté the fish
Place a pot on the stove over medium heat, add 1 tablespoon of cooking oil, when the oil is hot, sauté the purple onion and 1 teaspoon of turmeric powder, 1 chili.
When the purple onion is fragrant, add the tomatoes and sour fruits, stir-fry for about 2 minutes. Then add the carp and sauté for about 5 minutes until the fish meat firms up.

Add 2 liters of hot water to the pot, when the water boils, add pineapple, season with 1/2 teaspoon of salt, 1/2 teaspoon of seasoning powder, 1/2 teaspoon of monosodium glutamate, and cook for 5 minutes until the fish is cooked.
