How to choose good mullet
- To select fresh, delicious fish, you should choose live fish that swim vigorously. Fish with short, round bodies are female mullets with many eggs.
- Good mullet usually has red gills, shiny scales, firm flesh, and clear eyes. When placed in water, the fish sinks, and the flesh has good elasticity.
- Do not choose fish that feel slimy when touched, have an unpleasant smell, dark or pale flesh, as these are fish that have been dead for a long time and may have spoiled.

- First, clean the intestines, gills, fins, and tail of the fish, then rinse with water.
- Next, use salt or ginger water to rub all over the fish to remove the fishy smell and sliminess. You can also use lemon juice or vinegar which will have a similar effect.

Grilling the fish
Place the grill over the charcoal stove, lay the fish on the grill, and grill for about 10 – 15 minutes, then flip it over and continue grilling for another 10 minutes until the fish is evenly cooked.
