How to prepare Grilled Carp with Ginger Fermented Rice

Prepare the carp
It is advisable to buy cleaned carp that has been scaled and cut into several small slices, but not too thin.
Cut the carp into thinner and smaller pieces for grilling.

Prepare the ingredients for fermented rice
Slice ginger thinly, chop chili, lemongrass, and turmeric leaves.
Put ginger, lemongrass, and turmeric leaves into the blender.
Add 2 tablespoons of fermented rice and continue blending.

Make the fermented rice
Add shrimp paste, fish sauce, sugar, seasoning powder, turmeric powder, oyster sauce, and ground pepper to the blended mixture.
Mix well, then add a little cooking oil and continue mixing until all the ingredients are well combined.
Marinating the carp
Put the sliced carp into the mixture of fermented rice, add a little annatto oil to make the finished product more colorful.
Mix well so that the fish absorbs the spices and wait for 30 minutes.



Grilling the fish
Line the air fryer with aluminum foil, arrange the fish evenly in the basket.
Set the timer for 15 minutes at a temperature of 200 degrees Celsius.
Flip the fish and grill for another 12 minutes.

Enjoying
