  • Prepare the ingredients

    After purchasing, clean the basa fish, remove the internal organs, wash thoroughly, and drain. Make several cuts on the fish body to allow the marinade to penetrate.

    • To remove the fishy smell of saba fish, you should clean the scales, remove all internal organs, and wash away any blood thoroughly.
    • Then, you can wash the fish with lemon juice for 2 – 3 minutes, then rinse with clean water.
    • Replace lemon juice with rice wine or vinegar to also help eliminate the fishy smell.

    Green onion should be trimmed of wilted leaves, washed clean, and chopped finely. Peel the shallots and garlic, wash the chili, and then chop the garlic and chili finely, and slice the shallots.

    Squeeze the lemon to extract the juice. Roast peanuts and crush them finely.

  • Marinate the fish

  • Make dipping sauce

    In a bowl, mix 4 tablespoons of fish sauce, 4 tablespoons of sugar, the juice of 1 lime, and 4 tablespoons of water, stirring well.

    Adjust the taste as needed and then add minced garlic and chili to complete.

  • Grilling Fish

    Use aluminum foil to line the bottom, place the fish on top, arrange shallots around the fish, and start wrapping the foil tightly. Preheat the oven for 5 minutes at a temperature of 170 degrees Celsius.

    Next, put the fish in to grill each side for about 15 minutes at a temperature of 170 degrees Celsius.

    When the time is up, unwrap the foil, drizzle scallion oil and crushed peanuts over the fish, and enjoy!
