How to choose fresh and delicious ingredients
How to choose delicious tilapia
- It is advisable to buy live, healthy tilapia that has shiny gray scales, without scratches or peeling.
- A delicious tilapia will feel heavy when lifted, and the flesh will have a certain elasticity.
- The larger the tilapia, the tastier it will be because larger fish have firmer and sweeter flesh.
How to choose fresh tomatoes
- Choose tomatoes that are red, juicy, with thin, shiny skin.
- It is better to buy tomatoes with green stems firmly attached to the fruit as these are freshly harvested and will be delicious.
- Avoid purchasing tomatoes that are unevenly ripe, feel hard when touched, and lack a certain elasticity, as they will not be tasty when cooked.
How to choose fresh pineapples
- Choose pineapples that are bright yellow from the base to the top, or may have a little green mixed in.
- It is better to buy short, cylindrical pineapples as they will have more flesh and be sweeter than long-stemmed ones.
- Choose pineapples with large, spaced eyes.
- Pick those that feel heavy in hand, with a fresh top.
- Avoid purchasing pineapples that have turned orange or have black spots on the skin.

-
Prepare other ingredients
The purchased bean sprouts should be washed and drained. Tomatoes should be washed and sliced thinly. Okra should be washed and cut into pieces about 2 finger lengths. Herbs and chili should be washed thoroughly and chopped finely.
Pineapple should be peeled, eyes removed, cored, and cut into bite-sized pieces.
Quick pineapple peeling tip:First, cut off both ends of the pineapple, stand it upright and peel off the skin. Next, angle the pineapple’s eyes to connect them into a straight line, using a knife to cut and remove these eyes, repeating this until all the eyes are gone. The pineapple after peeling looks like a spiral.

Drop tamarind into the pot and stir, let the tamarind sit in the pot for about 2 minutes until it softens and dissolves into the water, then take it out into a bowl. Add 50ml of water to the bowl, then mash the tamarind until it dissolves into water.
Then, continue to cook the fish for 20 minutes before removing them.
