For live chickens

  • A healthy chicken will move actively, have smooth and shiny feathers. In contrast, a sick chicken will appear lethargic, with its tail slightly drooping and moving sluggishly, nodding. You should avoid buying such chickens.
  • Absolutely do not buy those with the following signs: Fluffed feathers, erect head feathers, slightly damp feathers, always keeping eyes shut, eyes and nose often discharge, legs showing bruises, swelling, and the comb being pale purple or black and blue.

For processed chickens

  • You should choose one that is of moderate size, with a characteristic golden yellow skin. The outer skin should be thin, smooth to the touch, not too bumpy, and have good elasticity.
  • Fresh and good-quality chicken should have naturally pinkish-red meat, not too pale or too dark, with no bruises or blood clots.
  • Absolutely do not buy those with strange colors, bruises, or unusual smells, as these may be sick chickens or have been stored for too long.

  • Mac Mat leaf is a type of leaf harvested from the Mac Mat tree. This type of leaf has a dark green color, a smooth and shiny surface, and a thin layer of fur on the back. Typically, people use this leaf for grilling or roasting dishes to enhance the aroma and increase attractiveness.
  • Currently, you can find Mac Mat leaves at specialty spice stores or places that sell ornamental plants. Additionally, you can also order them from reputable e-commerce websites!

  • Prepare the ingredients

    After buying the chicken, you clean the feathers, rub salt all over the chicken to eliminate odors, and rinse it thoroughly with water.

    Then, use a knife to cut a hole in the belly area to marinate the spices, and after that, place the chicken in a basket to drain.

    Wash the Mac Mat leaves, let them drain, then crush them to release the fragrant essential oils. Peel the garlic and shallots, wash them and let them drain.

    Peel the cucumber and carrot and wash them several times with water. Next, use a knife to cut them diagonally into bite-sized pieces.

  • Make the marinade and marinate the chicken

    Add 1 teaspoon of salt, 3 shallots, 5 cloves of garlic, 1 teaspoon of oyster sauce, 1 teaspoon of annatto oil, 1 teaspoon of sesame oil, and 1 teaspoon of white sesame seeds into a mortar, then use a pestle to pound and mix the mixture thoroughly.

    Then, divide the marinade mixture into 2 parts, one part to rub all over the chicken skin and the remaining part to mix with the Mac Mat leaves to stuff into the chicken’s cavity.

    Next, let the chicken marinate for about 30 minutes to absorb the flavors!

  • Grill the chicken

    After 30 minutes of marinating, skewer the chicken onto the rotisserie, tightly tie the chicken’s cavity to prevent the Mac Mat leaves from falling out while grilling, and secure the chicken firmly onto the rotisserie of the oven.

    Next, set the rotation mode to 230 degrees Celsius with heat from both top and bottom, and grill the chicken for about 120 minutes.

  • Mixing pickles and dipping sauce

    Put the prepared cucumber and carrot into a bowl, add 1 tablespoon of sugar, 1 teaspoon of salt, and 2 tablespoons of vinegar, then mix well and let it marinate for 30 minutes.

    Next, pound 1 tablespoon of salt with 2 grams of black pepper, add 1 small chopped shallot, 1 minced chili, and squeeze in a piece of lime to make the dipping sauce flavorful.

    Note: You can adjust the shallot, chili, and lime juice in the dipping sauce to suit your taste.
