  • To select good native chickens, choose those with light yellow skin, thin and smooth, high elasticity, and dark yellow spots in some areas like the breast, wings, back, with a compact and firm body, and narrow breast.
  • Use your hand to press on the (thigh, breast) area to check if the chicken has been injected with water; if it feels mushy, slippery, or deformed, do not buy it.
  • For frozen chicken in supermarkets, check the reputable origin and expiration date on the packaging to ensure quality.

  • Choose leaves that are a beautiful green color, small, pointed leaves, and stems that are purple with a distinctive fragrance.
  • Do not choose leaves that are wilted or no longer have a fragrant smell.

  • Choose small star anise bulbs that are white and not yellowing, with green stems that are not fading, and have a light fragrance. You can buy star anise at large supermarkets.
  • Tarragon leaves are smooth, oval-shaped, with a beautiful green color and a very aromatic smell. There are two types of tarragon available in the market: fresh and dried.   • Prepare the chicken

    You buy pre-prepared chicken from the market. To clean the chicken and eliminate any odor, soak the chicken in diluted salt water for 15 minutes. Then just rinse the chicken several times with clean water.

    • After plucking the chicken feathers, remove the oil gland from the tail, and use a mixture of salt and vinegar to wash the chicken. Then soak the chicken in water for 20 minutes.

    Preheat the oven to 180 degrees Celsius for 15 minutes to stabilize the temperature.
