Ingredients for Teriyaki Chicken Breast For 4 people
Chicken breast 400 grams Oyster sauce 4 tablespoons Soy sauce 3 tablespoons Orange juice 3 tablespoons Brown sugar 2 tablespoons Mirin 2 tablespoons Sesame oil 1 tablespoon Roasted sesame 1 tablespoon Minced garlic 10 grams Minced ginger 10 grams Zucchini 50 grams Pineapple 1 piece (khóm; dứa) Tomato 1 piece
How to choose fresh and delicious chicken breast
- To choose good chicken breast, select the piece with white skin as this indicates that the chicken is mature and the meat will be firmer and tastier. When you press the meat, it should be elastic, not mushy.
- You should avoid choosing pieces of breast that have many white streaks; the more streaks, the less fat and protein it contains, making it harder for the meat to absorb seasonings when cooked.

How to prepare Teriyaki Grilled Chicken Breast
-
Prepare the chicken breast
Remove the skin from the chicken breast you bought, rinse it with water, then rub salt evenly over the piece of breast and rinse again with clean water to eliminate any fishy smell, let it drain or use a clean towel to dry it.
Then, cut the chicken breast into large pieces about 1.5 – 2cm thick.
Tip for preparing chicken breast to remove odor:
- After rubbing with salt, you can use a mixture of alcohol and sliced ginger, pounding it gently while rubbing and kneading the whole piece of breast again, helping to completely eliminate any odor and impurities. Rinse thoroughly and let it drain.
- Alternatively, you can add lemon to the water, soak the chicken breast for 15 – 20 minutes. After that, take it out, rinse with cold water, and let it drain.
-
Making sauce and marinating chicken breast
Gradually add 10 grams of minced garlic, 10 grams of minced ginger, 4 tablespoons of oyster sauce, 3 tablespoons of soy sauce, 3 tablespoons of orange juice, 2 tablespoons of brown sugar, 2 tablespoons of mirin, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds into a bowl.
Stir well until the ingredients dissolve and blend together.
Add the teriyaki sauce to the prepared chicken breast, mix well, and let it marinate for at least 30 minutes to absorb the flavors.
Tip: To make the dish more flavorful and well-marinated, you should marinate the chicken with the sauce overnight in the refrigerator.
-
Preparing vegetables
Zucchini, after purchasing, wash thoroughly and cut into bite-sized rounds. Peel the pineapple and cut into thick slices about 2cm.
Wash the tomatoes and cut them into wedges.
Tip: You can change the accompanying vegetables according to your personal and family preferences!
-
Grilling chicken breast
Preheat the electric grill for about 5 minutes to ensure an even temperature across the grill surface.
Then, place the chicken on the grill. Next, dip the vegetables into the bowl of marinade used to marinate the chicken breast, mix well, and then pick them out to place on the grill alongside the chicken breast.
Grill the chicken breast until the bottom side is golden, then flip the chicken breast, brush on a layer of teriyaki sauce, and continue grilling until the other side is golden to complete.
Tip: During grilling, avoid flipping the meat too many times (maximum 3 times) to preserve the flavor!
