Duck meat has long been a rustic and familiar food to Vietnamese people, with diverse and rich preparation methods. Today, let’s join into the kitchen with TasteVN and try making the delicious and attractive grilled dish called grilled duck with the name grilled char siu duck!

How to prepare Grilled Char Siu Duck

Prepare the duck meat
After purchasing the duck thighs, clean off any remaining feathers, use salt to scrub the surface of the duck, and rinse with water to make it cleaner.
Tip for cleaning the duck, eliminating any foul smell:
- After scrubbing with salt, you can use a mixture of rice wine and sliced ginger, crush it and rub it all over the duck again to help eliminate any foul smells and impurities. Rinse well and let it dry.
- Alternatively, you can add vinegar to the water and soak the duck for 60 minutes. After that, take the duck out, rinse with cold water, and let it dry.

Marinate the duck
Add 1/2 tablespoon of char siu powder, 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1/3 tablespoon of monosodium glutamate, and 1/2 tablespoon of sugar into the bowl containing the duck. Next, add minced shallots and garlic.
Evenly spread the spices onto each piece of duck skin. Use plastic wrap to cover and marinate the duck for 60 minutes to allow the duck to absorb the spices.
You can also marinate the duck overnight for a more flavorful experience.

Roast Duck
Place the duck on the roasting tray. Line the bottom of the tray with aluminum foil. Next, use a brush to evenly coat the marinade sauce over the surface of the meat.
Put the duck in the oven, roasting at a temperature of 200 degrees for 30 minutes.
After 30 minutes, open the oven, brush a layer of marinade sauce evenly over the duck, and roast for another 30 minutes at 200 degrees to complete.
Note: To control the temperature, helping the duck cook quickly and not burn, you can also use an electric oven to make this dish. -
Final Product
The roasted duck is fragrant, with the outer skin evenly absorbed with spices, giving a rich flavor, while the meat inside is tender and not dry at all, you can eat it without getting bored! You can enjoy char siu roasted duck with white rice or with rice paper, both are fantastic!
How to choose delicious duck
- For grilled dishes, you should choose Muscovy duck because they are usually fatty, meaty, and have less down, saving you a lot of time when cleaning.
- Observe that the outer skin has a light yellow color, evenly colored; do not choose ones that are too dark, with uneven patches or have bruises and blood clots.
- Pressing on the duck meat should feel firm and elastic, so choose these immediately; do not select those that deform when pressed as they have been injected with water.
