- For this grilled dish, you should choose grass duck; if you can find Vân Đình duck, it will be even more authentic and delicious.
- The meat of male ducks is usually tastier than that of female ducks.
For live ducks:
- You can observe the outer feathers; only choose ducks with smooth, full feathers. Avoid those with rough or sparse feathers, as they may be molting or sick.
- Choose ducks that are fully grown, with a plump and round breast, as they will have more meat. Check the feathers to see if the skin on the neck and belly is thick, then you should buy.
- Use your hands to pull the two duck wings together; if they cross each other at just the right length, the duck is mature and the meat is good.
For prepped ducks:
- Observe the outer skin; it should be light yellow, uniform in color. Avoid those that are too dark, mottled, or have bruises or blood clots.
- Press the duck meat with your hand; if it feels firm and has elasticity, choose it immediately. Avoid those that deform when pressed, as they may have been injected with water.
How to Prepare Van Dinh Roasted Duck

Prepare the Duck
After cleaning the duck, removing the innards, and cutting it open, rub salt all over the duck’s body, then rinse with clean water.
Next, use a mixture of rice wine and sliced ginger, bruise it while rubbing and squeezing the entire duck again to help eliminate unpleasant odors and dirt. Rinse thoroughly and let it drain.
Tip for Cleaning Duck: In addition to using the mixture of rice wine and ginger as above, you can also use a mixture of salt, lemon/vinegar to rub the entire duck; this is another effective way to eliminate the duck’s odor.

Prepare Other Ingredients
Peel and wash shallots and garlic, then finely chop.
Wash the lemongrass, finely chop it. Remove the stems from the chili peppers, wash, and finely chop.

Make the Marinade for the Duck
In a bowl, add 1 teaspoon of salt, 1/2 teaspoon of MSG, 1/2 tablespoon of seasoning powder, 1/2 tablespoon of oyster sauce, 1/4 tablespoon of pepper, 1/2 tablespoon of sugar, 1 tablespoon of honey, and 1 tablespoon of annatto oil.
Next, add the minced garlic, minced lemongrass, minced shallots, and minced chili.
Use chopsticks to mix well so that the ingredients blend together.

Marinating the duck
Use a fork or specialized meat poking tools to lightly poke the duck’s body, helping the duck absorb the seasoning more evenly during marination.
Use a brush to evenly apply the prepared seasoning mixture all over the duck, both inside and out. Then marinate the duck for about 30 minutes to allow it to absorb the seasoning.

Grilling the duck
Pour charcoal into the grill, light the fire, and turn on the fan to evenly heat the charcoal.
Place the marinated duck on the grill, then put it over the charcoal to grill for about 20 – 30 minutes. During the grilling process, occasionally use a brush to apply the marinade sauce onto the duck to keep the meat tender and prevent it from drying out.
Grill until the duck meat is evenly golden brown on both sides to complete.
Note:
- Use a three-pronged metal stick to skewer and grill the duck more easily, spreading the duck’s body out evenly and clamping it onto a large grilling rack.
- To give the duck a nicer color, during grilling, you can brush an additional layer of honey on the duck’s skin.
- If you are not grilling over charcoal, you can also grill it in an oven at 200 degrees Celsius for 30 minutes. After 30 minutes, take the duck out, brush the marinade sauce on it, and continue grilling for another 30 minutes to finish.
