    After buying 1kg of eggplant, wash it thoroughly, then cut off the stem at the top and slice it lengthwise into thin pieces for easy rolling with meat.

    Next, spread a thin layer of cooking oil evenly on both sides of each eggplant slice, then sprinkle a little salt and place them in the oven to roast the eggplant for 15 minutes at 220 degrees Celsius.

  • Marinate the minced meat

    Add the minced meat to a bowl, then add 5 tablespoons of breadcrumbs, 1 teaspoon of salt, 1 teaspoon of chili powder, 1/2 teaspoon of mint powder, 1/2 teaspoon of ground pepper, and 1 egg, then use clean hands to mix well so that the meat absorbs the seasoning for 5 minutes.

    Next, add 3 cloves of minced garlic and 1 chopped shallot and continue to mix well for another 5 – 6 minutes for the meat to absorb the seasoning.

  • Shape and pan-fry the meatballs

    You take a portion of minced meat in your hand, then roll it into bite-sized balls.

    Turn on the stove to medium heat, place a pan on the stove, when the pan is hot, add the meatballs, press down on the meatballs to flatten them, then pan-fry both sides evenly for 3 minutes.

    When the meatballs are slightly charred on the outside and fragrant, transfer them to a plate.

  • Make tomato sauce

    With 6 tomatoes, wash them thoroughly, peel the skin, then place them in a blender and blend on the lowest speed until the tomatoes are just crushed.

    Turn on the stove to medium heat, add 2 tablespoons of cooking oil to the pan where you just fried the meat, when the oil is hot, add the blended tomatoes and cook for 2 minutes.

    Next, add 1 tablespoon of tomato paste, 1/2 teaspoon of chili powder, 1/2 teaspoon of mint powder, and 1/2 teaspoon of ground pepper to the pan, stirring the mixture for 1 minute to dissolve the ingredients and spices together.

    Then, add 300ml of filtered water, continue to cook until the sauce boils for about 5 – 7 minutes before turning off the heat.

  • Roll eggplant with meatball

    Place 2 slices of eggplant on top of each other in a cross shape, put 1 meatball in the center, then fold the eggplant around the meatball.

    Next, use a toothpick to secure the roll in the center. You can also add 1/2 cherry tomato and 1 slice of bell pepper to garnish the dish.
