How to choose fresh tilapia fillets
- Good tilapia fillets are those that have been deboned from fresh tilapia, with no pin bones, a light pink color, and good elasticity.
- You can buy pre-filleted tilapia or buy fresh fish to fillet at home.
Good tilapia will have the following characteristics:
- The tilapia has a round body, which indicates it is a male tilapia, with more meat, and the flesh will be firmer and more delicious.
- Fresh live fish will have transparent eyes, red gills, and shiny skin.
- Do not buy fish that swim little or weakly, with cloudy eyes, as these are usually fish that are about to die.
How to choose good eggs
- Choose eggs that are dark brown, evenly colored, and round.
- Fresh eggs will feel rough and slightly coarse to the touch.

Grind the fish cake
You put the tilapia fillet into the blender along with a little cilantro, chili, green onion, minced onion, and minced garlic, then you turn on the machine and blend the ingredients until smooth.

Marinate the fish cake
You marinate the fish cake with 1/3 tablespoon of seasoning, 1/4 tablespoon of ground pepper, 1/4 tablespoon of monosodium glutamate, 2 tablespoons of tapioca flour, 2 tablespoons of fish sauce, 4 tablespoons of oyster sauce, and 1 egg yolk, then you mix it all together with clean hands.

Shaping and Grilling
You take a portion of fish paste about 1 tablespoon and put it in your hand.
Next, you flatten the fish paste and place a stalk of lemongrass in the middle so that the root of the lemongrass is inside, with the stalk sticking out about the length of a pinky finger.
Then, you shape the fish paste again to completely wrap around the root of the lemongrass.
To grill the fish paste, you place it in an air fryer and grill for 20 minutes at 175 degrees Celsius.
