Grilled sticky bananas with coconut milk dip is a popular snack loved by many. You want to make it but don’t have a charcoal stove. Then let’s get into the kitchen with TasteVN to make this dish using an air fryer!
Ingredients for Grilled Sticky Bananas For 10 banana cakes

Tips for Choosing Bananas
- For this dish, you should use pearl bananas or Siam bananas as these two types are chewy, sticky, and sweet.
- You should choose bananas that are fresh, moderately ripe, and avoid overripe bananas.

How to Make Grilled Sticky Bananas

Prepare and Marinate Bananas
Peel the bananas and soak them in salt water for 1 minute.
After 1 minute, rinse the bananas and let them drain.
Then marinate the bananas for 2 hours with 1 tablespoon of sugar and 1/3 teaspoon of salt.

Cooking Sticky Rice
You pour 500g of rice into a rice cooker and wash it clean.
Then measure 2 cups of water in the rice cooker and start cooking.

Steaming Sticky Rice with Coconut Milk
Next, you place a dry pan on the stove, turn the heat low, then add 200ml of coconut milk, 1 tablespoon of sugar, and 1/4 teaspoon of salt. Then stir well until the sugar and salt dissolve completely.
When the sugar and salt have dissolved, add 1 tablespoon of cooking oil and stir well.
Next, add the sticky rice to the pan and stir until the rice absorbs all the coconut milk and is dry.

Banana Wrapping
You divide the banana leaves into 2 parts.
- Part 1 cuts the banana leaves into rectangular pieces that are the length of the leaf veins, while the width is equal to the length of the banana.
- Part 2 cuts into pieces about 3 – 5 cm wide.
Then wash the banana leaves and dry them.
Spread plastic wrap on a cutting board, then take a handful of sticky rice, mold it roughly into a cylinder shape, and use your hands to press and flatten the rice.
Place 1 banana on the sticky rice piece and wrap the rice around it like a spring roll.
Use the plastic wrap to reshape and adjust the shape of the cake to make it look nice.
Next, take 2 pieces of banana leaves from part 2, 1 piece lengthwise along the banana, and 1 piece wrapped across the banana. Then take 1 banana leaf from part 1 to wrap the banana round and then take it to grill.
Note:The tighter you wrap the rice around the banana, the more beautiful and delicious the cake will look.

Grilling the Banana
You place the banana cakes on a baking tray to grill.
Set the temperature in the air fryer to 200 degrees Celsius for 20 minutes.
After 20 minutes, flip the cakes and grill again at 200 degrees Celsius for another 20 minutes to ensure both sides are cooked evenly.

Cook Coconut Milk
Boil a pot of water and then add the tapioca pearls to cook for 10 – 15 minutes, then take them out and rinse under cold water.
With the remaining 200ml of coconut water, heat it up with pandan leaves and 1 tablespoon of sugar, when the coconut water boils, add the tapioca pearls, mix well, and turn off the heat.
Tip: If you want the coconut milk to be thicker, you can mix 2 teaspoons of cornstarch with 1 tablespoon of water and pour it into the pot of coconut milk to make it thicker. -
Final Product
The grilled banana sticky rice after completion has a crispy sticky rice layer, with chewy, fragrant, and sweet bananas inside. When dipped in coconut milk, it enhances the sweetness and richness of the dish, making it more flavorful.
