How to choose fresh live oysters
- You should choose oysters that are still in their shells, have a conical shape and are tightly closed together; when picked up and shaken, they make a sound and the oyster shells are not too dry.
- Preferably choose oysters with short shells, round bodies, and not too big, as these are the ones that have more meat and are firmer.
- For oysters that have been shucked, you should choose those with the oyster meat tightly adhering and filling the shell, looking still fresh.
- Avoid choosing oysters that can easily come apart from the shell by hand or shucked oysters that are dry; these are oysters that have died or have been kept for too long, which will not taste good when eaten.

How to prepare Grilled Oysters with Scallions

Prepare the ingredients
Scallions, remove the roots and wilted leaves, wash clean and chop finely.
Peel the roasted peanuts, put them in a mortar and pound them until they are broken but not too fine.
Shallots, peel, rinse briefly with water, then chop small.
For the oysters, use a brush to clean them; to open the oyster, use a knife to cut the edge of the shell, then use another sharp knife to pry the shell open.
Tip: Be careful not to turn the oyster upside down while opening to keep the oyster juice. Place the oysters on a tray with shallow grooves to prevent them from spilling. -
Sauté shallots and make scallion oil
Add 5 tablespoons of cooking oil to the pan, place it on the stove, and cook over medium heat until the oil is hot, then add the minced shallots to sauté until fragrant, stirring continuously until the shallots turn golden, at which point you can turn off the heat.
Next, strain the sautéed shallots through a sieve to filter the oil, pour the oil into a bowl (rice bowl) and add the minced scallions, mixing well to complete the scallion oil.

Grill the oysters with scallion oil
Add 1 teaspoon of the prepared scallion oil to each oyster. Set the oven to broil on both sides with the fan on, preheat the oven for about 30 seconds, then place the oysters in to grill at 200 degrees Celsius for 10 minutes.
