Pork ribs 1 kg (or meaty spare ribs) Pear 1/3 fruit Thinly sliced orange 1 fruit Yellow orange juice 50 ml Finely grated orange zest 1 teaspoon Red wine 2 tablespoons BBQ sauce 100 ml (store-bought) Onion 1/3 bulb Garlic 10 cloves Korean chili powder 1 tablespoon Soda 150 ml (or substitute with Coca-Cola) Honey 1 tablespoon Tomato sauce 1 tablespoon Vinegar 1 tablespoon Soy sauce 2 tablespoons Olive oil 3 tablespoons Oyster sauce 2 tablespoons Brown sugar 2 tablespoons (or brown sugar) Pepper 1/2 teaspoon Fresh rosemary 2 sprigs

How to choose good short ribs

  • When buying short ribs, you should base it on the color of the rib piece to identify its freshness. Fresh short ribs usually have a light pink color, are elastic when pressed, and are not spoiled.
  • You should choose ribs with small and flat bones as this type has more meat and less bone than the large, round ribs.
  • Avoid choosing ribs that are too small as they may come from young pigs, which do not guarantee quality.

How to choose good pears

  • When choosing pears, observe the bottom part of the pear; select pears with a concave bottom and a round, full shape for sweetness and juiciness. Avoid pears with a protruding, uneven shape as they will be hard, less juicy, and bland.
  • Choose pears that still have stems, with the stem being deeply concave; do not select pears with shallow stems.

How to choose good oranges

  • You should choose large, round, evenly shaped oranges with thin skin, bright yellow color, and plenty of essential oils. These will be the delicious oranges that are juicy and sweet.
  • Choose oranges with an even yellow color; thin, glossy skin always indicates juicy fruit.
  • When selecting, you should choose firm fruits; avoid soft and spongy ones that are prone to spoilage.
Note: If yellow oranges are not available, people use green oranges as a substitute, but note that the skin of green oranges is more bitter than that of yellow oranges. Therefore, you should peel off the thin skin to reduce the essential oils before grating.

How to prepare Grilled Pork Ribs with Orange

  • Prepare the pork ribs

    After purchasing the pork ribs, soak them in cold water for about 2 hours to help clean the dirt still attached to the meat. Then wash the meat thoroughly again and let it drain.

    To ensure the ribs are not tough after grilling, once the meat has drained, turn the part with the white membrane of the ribs up and use a sharp knife to cut it off.

    Tip for cleaning pork ribs:

    • When soaking the meat in cold water, you should use your hands to gently squeeze the meat to remove dirt more thoroughly.
    • For the final wash, you should soak the meat in diluted salt water for 3 – 5 minutes, then rinse it clean again.

    Small tip: After washing the pork ribs, you can cut them into small pieces for grilling or keep them whole. If you are making this grilled dish for home parties, it’s better to keep the ribs whole for a more appealing presentation on the dining table!

    After purchasing, soak the pear in diluted salt water and then wash it clean, peel off the skin, and chop it into small pieces (remove the seeds).

    Peel the onion, soak it in cold water for about 15 minutes to reduce its pungency, then chop it into smaller pieces for easier grinding.

    Crush the garlic with a knife and then peel it.

    Place the chopped pear, onion, and garlic into the blender, then blend the ingredients until smooth and transfer to a bowl to prepare the sauce mixture.

  • Make orange marinade for ribs

    Gradually add into the bowl containing the blended ingredients the oyster sauce, olive oil, soy sauce, vinegar, tomato ketchup, red wine, sugar, Korean chili powder, honey, black pepper, grated orange peel, soda water, and the prepared BBQ sauce.

    Mix the mixture until all ingredients are completely dissolved, and you can adjust the seasoning to taste.

  • Marinate ribs

    After preparing the ribs, place them in a bowl, then marinate the ribs with 1/2 of the marinade mixture and spread it evenly over the ribs so that the sauce is absorbed thoroughly.

    Use plastic wrap to tightly cover the bowl and place it in the refrigerator for at least 4 hours or overnight, so that the meat, when grilled, will be more flavorful.

  • Grill the ribs

    Place the marinated ribs on aluminum foil and wrap the top tightly.

    Note: Wrap the ribs in aluminum foil very tightly to prevent any tears in the foil, which can lead to the meat being dry and burnt on the outside while still being raw inside.

    The ribs are grilled 4 times at different temperatures and times:

    Grilling round 1: Place the ribs wrapped in aluminum foil in the oven at 190 degrees Celsius for 20 minutes.

    Grilling round 2: After 20 minutes of grilling at 190 degrees Celsius, remove the meat and take off the aluminum foil from the ribs, then brush 1/4 of the sauce over the entire rib piece. Continue grilling at 190 degrees Celsius for 10 minutes.

    Grilling round 3: Take the ribs out of the oven and brush all the sauce on, then arrange thinly sliced oranges on top of the ribs along with a few sprigs of rosemary for aroma. Continue grilling at 200 degrees Celsius for 7 minutes.

    Grilling round 4: Increase the temperature to 250 degrees Celsius for 4 – 5 minutes to slightly char and evenly brown the ribs, then take the ribs out of the oven to complete.

  • Marinate the ribs

    After the ribs have been prepared, place them in a bowl, then gradually add the seasonings including 1 tablespoon of fish sauce, 1/4 teaspoon of salt, 1 tablespoon of oyster sauce, 1 tablespoon of chili sauce, 1/4 teaspoon of pepper, 2 tablespoons of honey, 1 tablespoon of cooking oil, 1.5 tablespoons of chili powder, and the freshly squeezed orange juice.
