How to choose fresh and delicious red tilapia
- You should choose fish that are diamond-shaped, bright pink in color, with evenly distributed blood vessels, a firm belly, and dark pink gills, as these are signs of fresh red tilapia.
- Fresh red tilapia has clear, bright eyes that are not cloudy and slightly bulging; when you touch them, they feel firm, and the flesh has a good bounce.
- Avoid buying red tilapia that are oval-shaped, pale in color, have an unbalanced length, a pale belly, and a slightly fishy smell, as they may be spoiled and not tasty.

How to prepare Grilled red tilapia with rice paddy herb
-
Prepare the red tilapia
When you bring the red tilapia home, cut off the fins and gills, then scrape off the scales and clean the insides.
Next, wash it thoroughly and let it drain or dry it with a towel, then use a knife to make 2-3 evenly spaced cuts on both sides of the fish so that the marinade can penetrate better.
-
Prepare the other ingredients
Wash the rice paddy herb, pick the leaves, chop half of them finely, and leave the other half whole.
Peel the turmeric, wash it, and then pound it finely. Peel the shallots and garlic, then chop them finely.
-
Marinate the fish
Add crushed turmeric, finely chopped rice paddy herb, shallots, and half of the minced garlic into a bowl, then add half a teaspoon of seasoning powder, one teaspoon of sugar, one tablespoon of cooking oil, and one tablespoon of fish sauce, then mix well to combine the ingredients.
After that, apply the seasoning mixture evenly over the fish body and belly, especially in the slits on the fish body, and let it marinate for about 30 minutes to absorb the flavors.
-
Grill the fish
Preheat the oven to 200 degrees Celsius for 15 minutes before grilling.
Then, place aluminum foil on the tray, layer banana leaves on top, and place the fish on it. Next, pour the remaining seasoning mixture over the fish and arrange the whole rice paddy herb leaves around the fish to enhance the aroma while grilling.
Finally, wrap the aluminum foil and place the fish in the tray into the oven to grill at 200 degrees Celsius for 30 minutes until cooked.
Tip: To ensure the fish is tender and sweet after grilling, and retains its freshness, remember to preheat the oven first, allowing it to stabilize in temperature for the best grilling results. -
Make dipping sauce
You add 2 tablespoons of tamarind juice, 1 tablespoon of fish sauce, 1 tablespoon of water, half of the remaining minced garlic, and 1 teaspoon of minced chili into a bowl and stir well to finish.
