How to choose fresh giant shrimp
- You should choose large, live shrimp, with intact body parts and claws firmly attached to the body. Avoid those with claws that have turned black as they are no longer fresh.
- Choose giant shrimp with shiny, smooth shells, and a transparent color in the shrimp’s body. You can gently press the shell and rub it a few times; if the shell feels slimy, it is best not to buy it.
- Do not choose shrimp that have a large gap between the joints on the shell and the shrimp meat, as this indicates that the shrimp is not fresh.

Prepping the Prawns
With 300g of tiger prawns, after purchasing, wash them clean with water, then use a sharp pair of scissors to cut along the back of the prawn (from under the head to just before the tail). Be careful to only cut along the back and not to separate the prawn into two pieces.
After cutting the prawns open, you will see the dark intestines and the dirt line exposed. At this point, you just need to use your hand or a knife to remove that dark part.
Next, wash the prawns again with diluted salt water until they are completely clean, then place them on a plate to drain. After that, proceed to skewer the prawns onto a stick so that the stick runs along 2/3 of the length of the prawn.

Prepare 2 cloves of garlic, peel them completely, wash them clean, then chop them finely.
