How to choose fresh and delicious oysters

  • To make a delicious grilled oyster dish, you should choose oysters that are still in their shells or oysters that have been shucked but not separated from the meat and still contain seawater.
  • Prioritize buying short, round oysters that are not too big and have a tip; these are the oysters that have more meat.
  • Choose oysters that are tightly closed; when you lift them and shake, you should hear a sound. If there is no sound, then the oyster is dead.
  • For oysters still in their shells, you should buy them and ask the seller to pry them open because oyster shells are very hard to separate; you just need to buy them and do a quick preparation.
  • For shucked oysters, you should choose those with the oyster meat firmly attached and filling the shell; these are the oysters that have just been pried open or haven’t been stored for long.
  • Avoid choosing oysters that can easily be separated from the shell by hand or shucked oysters that are dry; these are dead oysters or have been stored for too long.

  • Preparing Oysters

    After purchasing the oysters, use a brush to scrub and rinse them under running water, especially the mouth of the oyster, to wash away all the dirt thoroughly.

    Once the oysters are clean and free of dirt, rinse them again with clean water and let them drain.

    To make it easier to open the oyster shells, briefly blanch the oysters in boiling water for about 2 – 3 minutes, then pour them out, let the oysters cool, and use a knife to separate the oysters from their shells.

    Boiling water will cause the oysters to naturally open, making it easy to separate the oyster shells. Be careful, as the oyster shells are very hot, so let them cool a bit to avoid burns.

    Quick and Simple Ways to Open Oyster Shells: You can open oyster shells using one of the following methods
    • Method 1: You can grill the oysters over a fire for about 3 minutes until the oyster shells naturally open. At this point, let them cool a bit, then separate the shells.
    • Method 2: Use a pair of scissors to cut the edge of the oyster shell about 1 cm to create a gap, then use the tip of the scissors to press against the top edge, insert it into the gap and apply force to pry the oyster shell open. Then, scrub the oysters thoroughly.

    Pour 2 tablespoons of fish sauce into a bowl and dissolve it with 1 teaspoon of sugar. Then add 1 piece of Laughing Cow cheese and stir well until the cheese is smooth and not clumpy.

    Continue the process until the eighth piece, and the cheese sauce is complete.
