How to prepare grilled sea urchin (cầu gai) with scallion oil

Prepare the sea urchin
Wash the sea urchin thoroughly. Use scissors to cut off some of the spiky shell.
At the bottom of the sea urchin, use the tip of the scissors to cut a circular opening, pouring out all the water inside to reveal the roe.
Use tweezers to remove all the innards as they contain all the waste, leaving only the roe, which is usually yellow or orange. Finally, rinse it clean with water.
Tip: To make the preparation process easier, you should wear fabric gloves to avoid getting pricked by the spines.

Prepare other ingredients
Green onions bought should have the wilted, bruised leaves removed, cut off the roots, washed clean, drained, and then chopped finely. Cheese should be cut into thin strands.
Pork fat should be cleaned and then drained. Next, place a pot on the stove, pour in about 1 liter of water, and add 3 tablespoons of salt, then boil the pork fat for 10 minutes over medium heat. After boiling the fat, remove it to cool, dry it, and cut it into pieces about the size of a finger segment.

Make onion fat
Put all the boiled fat into a deep pan, turn on medium heat. Fry until the fat is golden and crispy, then add a few cloves of garlic.
Stir occasionally to prevent the fat from burning and losing its original white color.
Finally, add all the chopped green onions and stir-fry for about 30 seconds to complete the onion fat.

Grilled Sea Urchin
Put all 4 chicken eggs and 4 tablespoons of unsweetened fresh milk into a bowl and mix well to dissolve the mixture.
Prepare a hot charcoal grill and a grilling rack. Clean the sea urchins and place them on the grill. While grilling, use a spoon to scoop the egg and milk mixture into the sea urchin. Finally, add scallion oil and shredded cheese.
After 10-12 minutes of grilling, the sea urchin is fully cooked from the roe to the chicken egg and cheese.
