How to cook stir-fried snail with coconut

Prepare the snails
After buying 1kg of snails, use a brush or scouring pad to clean the mud off the shell, then soak the snails in rice water for about 2 – 3 hours, and then rinse them under running water and let them drain.
How to clean snails, removing all sand
- Method 1: To completely remove sand from the snails, soak them in diluted lemon juice for about 1 hour to let the snails release the sand, then rinse them with water several times.
- Method 2: Soaking them in water with a few slices of chili for about 1 – 2 hours is also a very effective method, as the spiciness of the chili will help the snails clean out the sand.

Prepare other ingredients
With 3 cloves of garlic, you mince them finely, and the remaining stalk of lemongrass should be sliced thinly.

Stir-fry snails with coconut milk
Turn on the stove, add 1 tablespoon of cooking oil into the pan, when the oil is hot, add the garlic and lemongrass to sauté until fragrant.
Next, add the sea snails and stir-fry evenly for 1 minute. Then, add 1 teaspoon of seasoning, 1/2 teaspoon of monosodium glutamate, 1 teaspoon of sugar, and 1/2 teaspoon of ground pepper, stir well to let the sea snails absorb the seasoning for 5 minutes.
Finally, add the coconut milk, cooking over medium heat for 20 minutes until the coconut milk thickens, and then you can turn off the stove.
