How to Cook Grilled Garlic Snails with Green Onions

Prepare the snails
Soak the snails with chili for about 30 minutes to allow them to release some sand, then wash them with water while scrubbing the shells thoroughly.

Green onions, roots removed, washed, and diced.
Lemongrass, leaves trimmed, cleaned, and smashed.

Place the snails in a pot with a little lemongrass underneath and on top, add water to just cover the snails, add 1 teaspoon of salt, cover, and steam over high heat until the snails are cooked, then remove to a plate.

Add 100ml of cooking oil to the pan, place the pan on the stove and wait for the oil to heat up, then add minced garlic and shallots to sauté until fragrant, season with a mixture of 1/3 teaspoon of salt, 1/3 teaspoon of sugar, 1/3 teaspoon of monosodium glutamate, 1 tablespoon of fish sauce, and 1 tablespoon of chili sauce, then stir the mixture well.
After that, add the chopped scallions and stir continuously for about 30 seconds before turning off the heat.
