  • Choose snails that are still alive, tightly attached to the shell, and the meat of the snail is still somewhat moist. When touched, they will retract into the shell.
  • The snail’s scales near the outside of the shell, when touched, will close up.
  • Do not buy snails with soft, mushy bodies and scales deeply embedded in the shell, as they are likely dead.

How to prepare grilled pepper salt sea snails

  • Prepare the snails and boil them

    After buying the sea snails, soak them in a basin of rice water for 2 hours to allow the snails to expel all the dirt. Then rinse them 3 times with clean water.

    After washing, put a pot of water on the stove with 1 stalk of lemongrass, a little salt, and add all the sea snails to the pot to boil briefly. Turn the heat up high and cook until the water boils, then turn off the heat.

    How to clean sea snails of sand

    • Method 1: To allow the snails to expel all the dirt, you should soak the sea snails in water mixed with a diluted mixture of lemon and salt for about 1 – 2 hours.
    • Method 2: Put the snails in a basin of water with a little sliced chili; the spiciness of the chili can make the snails expel all the dirt and sand. This may be the simplest and most effective method. Do not use vinegar to clean the snails, as the strong smell of vinegar can affect the flavor of the dish.

    You take 5 crushed chili peppers, 3 crushed shallots, 1 minced lemongrass stalk, 2 tablespoons of cooking oil, 1 tablespoon of fish sauce, 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, and 1 teaspoon of turmeric powder, then mix well.

  • Grilling sea snails

    You light a charcoal stove and keep the grilling surface far from the coals because you only grill the meat of the sea snails, so having the fire close will cause the sea snails to burn and char easily.

    After drenching the sea snails in sauce, place them on the grill and grill for 5 minutes or until the meat of the sea snails firms up. While grilling, you must continuously flip them to prevent burning and ensure even cooking.

    You take the remaining sauce and drizzle it evenly over the sea snails, continuing to grill until the sauce dries up to complete the process.

    Note: The sauce contains cooking oil, so when drizzling it on, be careful to turn the skewers of sea snails that are close to the flame to avoid burning the meat.
