How to choose fresh ingredients
How to choose fresh minced pork
- Fresh minced pork should have a bright pink color, with the fat being white, especially noting that the meat does not have any unusual tiny dark spots.
- Additionally, a gentle press with your hand should reveal that the meat is tender, firm, and has good elasticity. Conversely, if the meat feels slimy, it should definitely not be purchased.
- You should avoid using minced pork that emits a very strong fishy odor, as this could indicate that the meat has spoiled due to being kept for too long, which is not good for your health.
- Moreover, to ensure the quality of the meat and the deliciousness of the dish, if you have time, you can buy whole cuts of pork and use a meat grinder to mince it yourself!
How to choose fresh green peas
- Typically, fresh green peas are those that are still tender, with a light green color, not too dark, looking fresh and not wilted.
- When touched, fresh green peas should feel distinctly firm, not mushy. Notably, the outer skin should appear shiny and not rough.
- You should avoid buying green peas that have changed to unusual colors or have unusual spots on the surface, as these are likely old peas and will not taste good.

Prepare the ingredients
First, wash 200g of peas with clean water 2 – 3 times, then drain. For the carrot, use a peeler to peel the skin, then rinse directly under the tap water until clean, drain, and then dice using a knife.
At the same time, place a pot on the stove with 300ml of water and 1 teaspoon of salt, boiling over high heat. When the water boils, add all the peas to cook for 2 – 4 minutes until the peas are soft, then quickly scoop them out into a bowl.
With the same pot, continue to add the diced carrot and blanch it for about 2 – 3 minutes, then turn off the heat and transfer the carrot to another bowl.
