Ingredients for Walnut Milk Serves 2

How to choose walnuts
For whole walnuts
- Choose nuts that are still whole, not cracked or broken. Large, heavy, and firm nuts will have more kernels and taste better.
- To ensure that walnuts are not oily, you should ask to check the kernel inside, it’s best to buy from reputable food stores, with clear expiration dates and origins.
For shelled walnuts
- Choose those with full, plump, and firm kernels. Additionally, the skin must be intact, not cracked, and the inside should be milky white and dry.
- Also, choose hard and crunchy nuts, not soft or wilted.
- Do not buy if you see oily nuts, shriveled kernels, or nuts with worm holes, dampness.

How to make Walnut Milk

Prepare the walnuts
Soak the walnuts in water for about 4 – 6 hours or overnight.
After soaking, rinse the nuts twice with water, then rinse again with clean water and drain.

Make the nut milk
Pour 1.2 liters of water into an electric kettle and bring to a boil, then let it cool for about 20 minutes until it reaches approximately 60 degrees Celsius.
Divide the walnuts into two batches for blending. For each batch, place the walnuts and 600ml of hot water at about 60 degrees Celsius into the blender, cover, and blend until smooth.
Strain the milk through a strainer about 2 – 3 times for smoothness, then add 130g of sugar and 5g of vanilla powder, stirring to get a homogeneous mixture.
Tip:- Instead of boiling water first and then cooling it down to 60 degrees Celsius before blending the nuts, you can blend the nuts with cold water first and then heat it on the stove until you feel it hot on the surface, then turn off the heat. Avoid boiling the milk as it may separate.
- You can use dried dates to add natural sweetness instead of white or brown sugar.
