How to make chocolate panna cotta

  • Chop the chocolate

    You use a knife to chop the chocolate into very small pieces so that when mixed with milk, the chocolate melts faster and more evenly. Then put the chocolate into a bowl.

  • Heat the milk mixture

    Soak 8g of gelatin in a bowl, add about 20ml of cold ice water, and let it sit for about 15 minutes to soften.

    In a pot, add 280ml of unsweetened fresh milk, 300g of fresh cream (whipping cream), and 35g of sugar. Turn on the stove and heat on low until it gently boils. Stir continuously to prevent burning.

    Once the mixture is evenly dissolved and the sugar has completely melted, turn off the heat.

    Slowly pour the mixture into the cups, gently touch the bubbles to break them all, ensuring a smooth surface for the cake. Then place it in the refrigerator for about 4 hours.

  • Gelatin is a product extracted from collagen found in animal bones and skin. Animal skin or bones undergo a very thorough processing from the cleaning stage to becoming gelatin that can be used in food.
  • Gelatin is produced in two common forms: gelatin powder and gelatin sheets. Gelatin can be considered an odorless, tasteless type of protein, but there are also types that are slightly yellow.

  • Cook the panna cotta mixture

    First, put 1 teaspoon of gelatin powder into a bowl and soak it with 10ml of water for 5 minutes to let the gelatin bloom.

    In a pot, combine 150ml of fresh milk, 20gr of honey, and 1 teaspoon of cocoa powder. Place the cocoa milk mixture on the stove and heat it over medium heat until it starts to steam, then reduce to low heat.

    Next, pour the soaked gelatin into the pot and stir well until fully dissolved, then turn off the heat, add 50gr of unsweetened yogurt at room temperature to the milk mixture and stir well.

    Pour the mixture into a cup through a sieve for a smooth texture, then cover the cup tightly with plastic wrap and refrigerate the mixture for at least 4 hours.

  • Remove the pudding from the cup

    When removing the pudding, soak the bottom of the cup in a bowl of hot water for about 8 seconds. After soaking, turn it upside down onto a plate and gently shake the bottom of the cup until the pudding falls out.

    Tip: Avoid soaking for too long; if you do, it will melt immediately because the gelatin will dissolve if exposed to heat for too long.

    Prepare a bowl of cold water and soak 10 gr of leaf gelatin until it expands.

    Note: In this step, you can use 2 tablespoons of gelatin powder as a substitute, but absolutely do not use agar powder, because a successful panna cotta should melt in your mouth. If you use agar powder, the final product will be crunchy, not soft and melting as expected!

How to store panna cotta

  • Panna cotta can be placed in the refrigerator to preserve and used within 1 – 2 days.
  • How to store whipping: unused whipping cream can be kept in the refrigerator, clean the cream stuck on the rim of the container, cover it tightly with plastic wrap, and then place it in the fridge; this method will keep the whipping cream for about half a month. Do not store it in the freezer as it will cause the cream to separate.
  • Alternatively, you can transfer the excess whipping cream into a clean glass bottle (that has been washed, rinsed with boiling water, and dried) and then seal it tightly before placing it deep in the refrigerator, avoiding the door of the fridge. This method will help you preserve the whipping cream for up to 1 month.
