How to choose fresh, delicious lychee

  • Good and ripe lychees will have a pink-red color, smooth spines, and when pressed, will feel slightly soft and have a springy texture.
  • Fresh lychees will have a light fragrant smell, while old or spoiled lychees will have an unusual smell, similar to fermentation.
  • When peeled, good lychees will have thick, soft white flesh, juicy, and easily separate from the seed.
  • Avoid choosing lychees with many sharp spines as these are usually unripe and sour. Also, do not buy lychees when the skin has dried to a brown color, showing cracks and leaking water; these lychees have been stored for a long time and have spoiled, lacking juiciness and having a spoiled smell when eaten.

How to Make Lychee Tea

  • Prepare lychees and cook the syrup

    Peel the lychees, then use scissors to gently cut at the stem to remove the seed inside without crushing the lychee flesh. Next, quickly rinse the lychee flesh with water and let it drain.

    Place a small pot on the stove, add 1 liter of water and bring it to a boil. Then, add 500g of rock sugar, and simmer for about 20 minutes over medium heat until the sugar dissolves and the syrup thickens, then turn off the heat and let it cool.

  • Soak the lychees

    In a bowl, add 3 ladles of syrup, then dip each lychee in this syrup and place the lychees into a box.

    Next, pour the remaining syrup from the pot into the lychee box, close the lid, and place it in the refrigerator for 4 – 5 hours before serving.

    Tip: To preserve for longer, do not put the syrup that has soaked the lychees into the box!

  • Make Lychee Tea

    Soak 2 bags of oolong tea in about 50 – 70ml of boiling water for 15 minutes.

    After 15 minutes, remove the tea bags, add to a glass 4 – 5 tablespoons of the soaked lychee water, a few soaked lychees, and some ice cubes to enjoy.
