How to Prepare Pandan Leaf Coffee Jelly

Prepare Pandan Leaves
First, take 4 stalks of pandan leaves, remove the roots, and rinse them directly under running water to clean off any dirt sticking to them, then drain and cut into pieces.
Next, put all the cut pandan leaves along with 100ml of water into a blender, cover it, and blend on medium speed for about 3 – 5 minutes.
Once the mixture is smooth and the water has turned green, turn off the machine and strain the extract 2 – 3 times to prepare.

Cooking the jelly mixture
After preparing the pandan leaves, add 1 packet of instant coffee to a cup with 3 tablespoons (45ml) of boiling water, and use a spoon to stir well until the coffee dissolves.
Next, add 10 grams of gelatin powder, 300 grams of sugar, and 1 liter of water to a pot, stirring with a ladle to combine the mixture.
Then, place the pot on the stove and cook over medium heat for about 10 minutes, continuously stirring in one direction.
When the jelly mixture starts to boil, skim off the foam, then divide the jelly into 2 equal parts into 2 separate pots and continue cooking over low heat.
Next, gradually add the prepared coffee from earlier into the first jelly pot, stir well, and cook for about 3 – 5 minutes. Similarly, for the remaining pot, add all the pandan leaf extract and cook for another 3 – 5 minutes.
Once both pots of coffee jelly and pandan jelly are cooked and thickened, turn off the stove.

Pour the jelly into the mold
After cooking the jelly, carefully pour the pandan jelly that you just made into a mold or bowl, and let it sit for about 15 – 20 minutes, until the jelly has slightly set, and when you touch it, it should not feel too loose, just slightly sticky to the touch.
Then, gently add the coffee jelly on top. Depending on your preference, you can pour in multiple layers to make the final product look more appealing.
Finally, let the jelly cool completely, then place it in the refrigerator for 1 – 2 hours. When enjoying, slowly remove it from the mold and use a knife to cut it into bite-sized pieces to complete.
Tip: If you haven’t had time to pour the jelly into the mold and it has already set, you can put it back on the stove over low heat, stirring continuously for about 3 – 5 minutes. -
